Dash Restaurant launches a monthly Wine Series Dinner

Each month, Dash Restaurant will partner with a different wine estate for its Wine Series dinner, creating a sublime menu to expertly pair with the wines of the featured estate.
For the 30 August event, Dash Restaurant’s Group Executive Chef, Terrence Ford, has worked with Hazendal Wine Estate to create a bespoke five-course menu designed to complement Hazendal’s premium wines. This will be served in the opulent Dash dining room, located on the ground floor of the Queen Victoria Hotel. Arrive before sunset for a drink at the bar, where one can enjoy panoramic views of Table Mountain and the Waterfront before moving to the intimate firelit dining room to enjoy this special dinner, which includes a personal presentation from Newmark’s Group Sommelier, Marlvin Gwese.
The menu
Course one pairs Salmon Tartare, pickled cucumber, orange emulsion, dehydrated onion and candied ginger with Hazendal Cap Classique Blanc de Blanc. This crisp Cap Classique, made from 100% Chardonnay grape varieties, has notes of crunchy Granny Smith apples, fresh pear, green melon and a whiff of brioche.
Course two pairs of brisket, bone broth and roasted butternut cubes with Hazendal Chenin Blanc. Expect bursts of apricot and lemon accompanied by spicy notes of ginger and nutmeg when you taste this excellent wine which ends with a creamy finish of macadamia nuts and buttery toast.
Course three pairs Char siu marinated Karoo rack of lamb, spicy aubergine chutney and smoked leek with Hazendal Cabernet Sauvignon. This rich wine includes deep aromas of bramble, blackcurrant, black cherry and decadent sticky toffee. The palate initially bursts with black fruit flavours before ending with notes of tobacco and star anise.
Dark chocolate delice, white chocolate ice cream and salted caramel ganache is paired with Hazendal Blanc de Noir for the fourth course. This delicate wine has aromas of freshly picked strawberries, raspberries, peach, rose, pear, citrus blossom and nectarine. It follows with a creamy finish which pairs beautifully with this dessert.
The meal ends with a selection of cheeses, preserves and petit fours paired with a Hazendal Chardonnay. This medium-body wine boasts floral notes of elderflower, citrus blossom, pineapple, mango and Cape Gooseberry with a creamy finish, including notes of almond, vanilla, nutmeg and honey.
